Sugar paste modeling is the art of pastillage. The result will be a cross between frosting and marble, with a fragile and tasty look. As long as you keep your art work dry and free from damage, the work will be permanent. If you break it, just mend with most glues (carpenter's wood glue or Elmer's Blue). You may want to experiment with coating with a clean lacquer or varnish for even greater strength and resistance to moisture.

To make the sugar paste you need unflavored gelatin (1 1/2 tsp), cold water (1/4 cup), a package of confectioner's sugar, and corn starch as a surface for kneading the paste. Sprinkle the gelatin onto the water and let it soften for 5 to 6 minutes. Put the bowl in a pan of hot water and add heat on the stove. Stir the mixture every so often until the gelatin is dissolved. Then cool slightly.



Add two cups of sugar in a medium-sized bowl. Stir until thoroughly mixed. Sprinkle corn starch evenly onto a pastry board. Knead the dough until smooth. Wrap in plastic and keep wrapped until ready to be used.

On your corn starch surface, just remove a piece of dough at a time, keeping the rest wrapped in plastic so that it won't dry out. If the dough dries or cracks while you are working on it, add a few drops of water and knead again. For color, break off a piece, add a drop or two of food coloring directly onto the dough and knead until the color is even and the dough has absorbed the moisture.

You can mold the dough into ribbons or tiny logs to create such things as baskets or little log cabins. Experiment with coiling each roll or ribbon to create a braided effect. You can attach two pieces by pinching the ends together. When you have composed your major pieces, you can decorate with additional molded pieces such as petals, leaves, and colored stones. Add these decorations to the final pieces later with glue. Let your handiwork dry completely. If you want a more permanent result, use Krylon spray or various types of clear varnish for a hard invisible surface that will not moisten or fracture as easily, and let it stand. Or just leave the pieces as they are for that fresher, whiter satiny look.
