How to pop perfect popcorn Content

Use a big pan, preferably a wok, with a lid. Bonus points if the lid has a vent.

Use one part oil to three parts popcorn kernels. I find 1/4 cup of oil and 3/4 cup of popcorn make a nice quantity for two or three hungry people. I like to use olive oil with a bit of corn oil.

Put the wok on the stove and turn the heat on high. Let it heat up a bit, then pour the oil into the wok and drop in three or four popcorn kernels. Cover. When the kernels pop, lift the lid and turn the heat down to medium. Wait about ten seconds, then pour in the rest of the popcorn and put the lid back on. Shake the pan a bit, then wait.

The popcorn should pop vigorously. Give the pan a shake now and then. When the pops slow down and sound like they're about to stop, take the pan off the heat and serve the popcorn. Salt to taste. It's nice with freshly grated parmesan cheese. Enjoy.
