At the farmer's market I got some raspberry honey, yellow peaches, Lithuanian-style kielbasa, and 3 beets. I only felt it necessary to get three because together they weighed about 4 kilograms, or almost 9 pounds. I was not at all sure about how to go about cooking such behemoths, but The Joy of Cooking's mention of using a pressure cooker to cook 6 cm beets in 15 minutes inspired me to try it, albeit for substantially longer.
It turns out that to cook a 1 kg beet in a regular pressure cooker at 2 atmospheres takes about 50 minutes. For the curious, I did not eat it all, since I'd already had a peach, 7 chicken wings, and some tea with honey. So, it's in the fridge awaiting future consumption. That and the 3 kg of remaining uncooked specimens should last me for a while.
